Chocolate Truffle Pie

I usually make a cake for my dad's birthday every year, but this year I decided to make chocolate cream pie. I saw the recipe on the back of the Hersey's Special Dark Chocolate chip bag. It called for mini marshmallows and frozen pie crust, both of which I had on hand and needed to use.
The pie was really rich. I probably should have cut the pieces smaller.

1 frozen 9 in pie crust
2 c mini marshmallows
1/2 c milk
2 c chocolate chips (12 oz bag)
1 c whipping cream (+ 2 Tbsp sugar to sweeten)
extra whipped cream to garnish
chocolate curls (optional)

Bake pie crust according to directions.
In large glass bowl microwave marshmallows and milk at 50% power for 30 seconds. Stir and repeat until smooth. Add chocolate chips and stir until all chocolate is melted. Microwave (50% power) for 15 seconds at a time, if needed. Pour one cup chocolate mixture into pie crust, chill.
Whip cream until stiff. When remaining chocolate has cooled to room temperature, carefully fold in whipped cream. Spread over chocolate in pie crust. Refrigerate 4-6 hours (if you can wait that long ;) Top with whipped cream and chocolate curls.

Hope you like it, Liz. :) I want to know what kind of stuff you do for fhe, my new calling is coming up with ideas/lessons to help make sure people do it.

Britt, I made this one a few weeks ago - I loved it! I agree with you though - not for the faint of heart - or rather, the people who don't really love chocolate like I do.

Sorry I didn't get your message above sooner. Here are my thoughts.

I have struggled with FHE for years! But, as my kids get older, I think we've found an easy and reliable resource that we can always use: Preach My Gospel.

For a while I used the Nursery manual - when my two older kids were younger, and then we wavered between a few different books that I bought, like the church FHE manual, Fast FHE, etc. Now, I use the Nursery manual (Behold Your Little Ones) to get ideas for activities or presentation materials for my two younger kids, and incorporate it into whatever topic we have chosen (usually dealing with questions they have brought up, or expanding on something they learned on Sunday the day before - in sharing time (I'm in the Presidency - so I also use our Sharing Time manual, which is on-line, for ideas)). Anyways, things are explained in very simple and powerful terms in Preach my Gospel with additional scripture references, etc. I also bought one of those books with all of the pictures, the Gospel Art book, which is always useful.

So, with all of these resources, it's always easy to clear off the dinner table and hand two of them to Jared and ask him to read through a topic in both of them and prepare some thoughts, while I do the dishes and prepare a treat. I think he likes it too - much better than asking him to prepare something when I know he's already stressed. I also like it if I'm busy and don't have time during the day to prepare something so I need to prepare something fast.

Also, this year we have started to ask one of our kids - except Chase - to help us prepare a lesson by choosing a scripture story that deals with our topic and (with Ethan and Brook) having them read it while we are preparing the rest of the lesson and then talking with them about it so they can present it to the family. Anyways, this sounds more complicated, probably, than it really is. It has been working well for us for more than two years now... I really love the Preach My Gospel.

Good luck with your calling!! What an awesome one. That's hard to come up with lessons because every family is so different. Maybe if you come up with the layout or a recipe for it, or just a topic for every week, people can adapt the recipe according to their needs and prepare their own FHE bin, or something. Wow!
